Speedway  Burgers
1 lb ground beef
Salt & pepper to taste
1/4 Moores Marinade Sauce
1/4 Cup onion chopped fine
Combine meat, marinade and onion, chill for 1/2 hr.  Grill as usual.

Checkerd Flag Chicken
1 cup Moores Marinade
1/2 cup lemon juice
1/2 Cup butter
1 tsp black pepper
Melt butter and add other ingredents and pour over chicken. Bake in oven 350 about an hour.
To grill refrigerate 15 minutes, grill and baste each time you  turn.

OG's Sana Brea Corn Dip
2 cans Mexicorn
1 can sliced green chilies
1 cup mayonaise
1  16 oz container of sour cream
1  16oz pkg  of chedder cheese shredded
1 cup onion chopped fine
1cup Jelapenos Peppers shredded
Drain corn, mix all ingredients and chill./  Serve with Corn chips
1 lg can sliced peaches in heavy syrup
1 box butter pecan cake mix (or vanilla)
1/2 cup melted butter
1 cup shredded coconut
1 cup chopped pecans
Pour peaches with syrup into 9x13" pan. Sprinkle dry cake mix over peaches.  Drizzle butter over cake mix.  Sprinkle coconut and pecans over that.  Bake 55 minutes at 350    ENJOY
Mary's Apple Blossom Cake
1 1/4 vegetable oil
2 Cups sugar
2 eggs
2 lg apples sliced thin
2 eggs
2 tsp vanilla
3 cu ps flour
2 tsp cinnamon
1 cup chopped pecans or raisins (optional)

Combine oil, sugar and eggs; beat well.  Add vanilla and cinnamon and flour.  Blend well.  Add nuts and apples; mix well.  Pour into well greased bundt (tube) pan.  I spray it with Pam and bake for 1 hr - to 1 1/4 hrs.

1 stick margarine
1 8oz cream cheese
Combine allingredients and blend to spreading consistency.

Pork Chop Casserole
4 nice size pork chops
4 average potatoes sliced thin
1 can cream of chicken soup
1 onion chopped fine

Brown chops and remove from pan.  In lg (I use a glass ) dish, layer 1/2 of potatoes, 1/2 of the sliced onion, pork chops that have been seasoned with salt & pepper to taste and half of soup.  Continue layers.  Bake uuncovered at 350  degrees for  one hr and 45 min. Check for doneness.

Sherry's Pecan Cake
Swamp Breeze
1 6 oz can frozen limeade concentrate
1 cup spiced run
3/4 Cup dark rum
1/3 cup orange liqueur
Ice Cubes
2-3 fresh mint sprigs
Process first 4 ingredients in a blender until smooth add ice to 5 cup level; process until smooth, add mint, blend, Garnish, if desiered. Yield: 5 cups

Philly Firecrackers
1/2 cup sour cream
1/2 cup mayo
1 grn onion, chopped
2 tb prepared horseradish
1/2 tsp salt
1/2 tsp pepper
8 (12" ) flour tortillias
1 lb roast beef, cut into 24 thin slices
2 (6 oz) package sharp chedder cheese
2 cups shredded lettuce
Stir together first 6 ingredients until blended.  Spread evenly on one side of each tortillia;  top with 3 beef slices and 2 cheese slices.  Sprinkle evenly with shredded lettuce.  Roll up tortillias tightly; wrap in plastic wrap and chill 8 hrs.  Makes a cool lunch with ice tea or cut into  1" slices for snacks. (may need to insert toothpick)

Hot Tamale Pie

Meat Filling:
1 1/2 lbs  ground meat
1 clove garlic, minced
1 lg onion, chopped
one 8-oz can tomato sauce
4 tblspns chili powder (more if desired)
1 cup pimiento stuffed olives, sliced
1/2 Cup water
(note, if you want this spicier, add little hot sauce)
Btown meat with garlic & onions.  Add remaining ingredients and cook for 10 minutes. Mixture should be moist enough to spread.

Corn meal filling.
3 cups water
1 beef bouillon cube
1 tsp salt
Dash garlidcpowder
1 cup water
1 cup cornmeal
Heat three cups water in saucepan with bouillon cube, salt and garlic powder.  Mix 1 cup cold water with cornmeal.  Pour meal and water into boiling warter, stirring constantly(this lumps if you do not stir as it is added).  Cook until thick and pour into 1/2 into  2 qt casserole dish. Let cool enough to become firm; then add meat filling and pour remaining cornmeal mixture over this.  Sprinkle top with paprika. Bake at 350 until very hot--about 30 minutes.  Serve with shredded chedder cheese and/or warm soft flour tortillias. Serves 6.
Five Layer Mexican Dip:
1 pound ground beef (browned and drained)
15oz can of refried beans
8oz sour cream
11.5oz salsa
2 cups of shreded cheese (sharp cheddar)

Take an 8x8 corning ware dish and the items in, in this order
refried beans, ground beef, sour cream, salsa, and cheese.
Poke hole in the dip and put it in the oven (microwave will work too) until it bubbles on the sides. Then take it out and serve it with some tortilla chips.

Quick Skillet Supper
1/2 lb sirloin steak
2tbs oil
2 cans mushrooms
1 can whole kernel corn, drained
1 can (14 oz) stewed tomatoes
1 clove garlic, minced
1 tsp. dried oregano leaves
1/8 tsp black pepper
3 C. hot cooked rice. ****
Partially freeze steak, slice across the grain into 1/8" strips.Heat oil in lge skillet over med-high heat until hot.
Brown meat quickly in about 2 minutes; remove. Add vegetables, garlic, oregano and pepper; stir. Reduce heat to medium; cover and cook 4 to 6 minutes.  Add neat anbd cook until heated. Serve over rice. Serves 4
***If you're not familiar with rice cooking, get Uncle Ben's Instant and follow directions.  Enjoy
1 box of yellow cake mix
2 eggs
8 oz. of soft cream cheese
1 teaspoon of lemon juice
1/3 cup of sugar
1/3 cup of oil

Blend  cake mix, one egg and 1/3 cup of oil until it's crumbly. Press into a 9 by 13 cake pan. Retain one cup full. Bake for 15 minutes at 350 degrees or
until light brown.
Blend cream cheese, one egg, lemon juice and sugar until smooth. Spread over mixture. Sprinkle the retained cup full on the top. Bake for another 15
minutes. Remove from oven. Let cool. Cut into Bars.

Angel's Lemon Bars
Student Munchies
2 cups shredded cheddar cheese
1 stick butter, softened
1 cup flour
1 cup rice cereal (like rice crispies)
Mix cheese with butter and add in flour until well mixed.  Gently mix in rice cereal, then roll into walnut-size balls.  Place on cookie sheef and press with a fork.  ( I spray sheet with Pam first) Bake at 350 degrees for 15 min. After cooling, serve and enjoy!

Shonda's Payday Bars  
1c. sugar                         1tsp.vanilla                             1c. white corn syrup         6c.  Chex cereal (rice or  corn)    1c. peanut butter              11/2c. dry roasted peanuts    

Microwave in a large bowl sugar and syrup for 30 seconds on high. Stir.  Microwave on high 4 minutes more.  Stir, than add peanut butter and vanilla, stirring well until dissolved. Stir in cereal and peanuts. Put into a buttered bar pan or 9x13 pan for thicker bars.


2lb. frozen hashbrown potatoes, thawed
8oz. sour cream
8oz. french onion dip
8oz. mild cheddar cheese, grated
1 can cream of chicken soup
Salt and pepper to taste
2c. crushed corn flakes
3\4c. butter

Mix first six ingredients together and pour into a
buttered 9x13 casserole dish.  Melt butter and mix in
corn flakes.  Spread on top of potato mixture.  Bake
at 350 degrees for 1 hour.

Cookie Ingredients

  3/4 cups all-purpose flour
1 1/2 cups sugar
1 cup LAND O LAKES® Butter, softened
2 eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon brandy  extract
1/2 teaspoon rum extract
1/4 teaspoon salt

Sugar Mixture Ingredients:

1/4 cup sugar or decorator sugar
1 teaspoon ground nutmeg


Heat oven to 400°F. Combine all cookie ingredients in large mixer bowl. Beat at low speed, scraping bowl often, until well mixed (2 to 4 minutes).

Stir together 1/4 cup sugar and nutmeg in small bowl. Shape rounded teaspoonfuls of dough into 1-inch balls; roll in sugar mixture. Place 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes or until edges are lightly browned

1 can (8oz) Crushed Pinnapple
1 can (15oz) Pinnapple Tidbits
1 can (15oz) Sliced peaches cut up if desired
1 can (10oz) manderine oranges
2 medium bananas cut in slices and coated with lemon juice
cherries that are halfed (as many as you want)
1 large box of French Vanilla instant pudding or
        2 small boxes

Drain all the can fruit but save the the juice from the pinnapple. Add all the fruit together. In a measuring cup put one cup of the pinnapple juice and add the pudding. Then toss the pudding into the mixed fruit. If you feel like experimenting add some of your favorite fruits to this salad but might have to use more of the pudding mixture.

Party Chicken

4 boneless, skinless chicken breasts
1 envelope Good Seasons Italian Salad Dressing Mix
2 TBL butter or margarine (I use a tiny bit more)
1 can cream of mushroom soup
1 container Philly Cream Cheese W/ Chive and Onion, softened
1/3 cup white wine or chicken broth

Preheat oven to 350 degrees.
In frying pan, melt butter.
Sprinkle both sides of chicken with Good Seasons Italian mix.
Brown well.
In separate bowl combine soup, softened cream cheese, and wine or chicken broth.Mix well.
Remove chicken from pan and place in 8x8 baking dish. 
Scrape drippings and browned bits from pan into soup mixture and combine.
Pour soup mixture to cover chicken.
Bake uncovered for 45 minutes to one hour.

This dish goes very well with white rice and green peas.  Spoon sauce over rice. Yummy!

2--3 Cups cooked rice
1/2 Cup chopped onions
1/2 Cup sweet pickle relish
1/4 Cup chopped celery
1/4 Cup chopped green onions (optional)
1/4 cup chopped green pepper
3 hard-boiled eggs, cooled & chopped
1 cup mayo
1tsp Dijon mustard
1/4 Cup  chopped olives
2--3 cups chopped shrimp
1/2 tsp salt
182 tsp garlic salt
1/2 tsp pepper
Blend all ingredients, tossing lightly with fork.  For maximum flavor, refrigerate several hours of overnight.Serve on  lettuce leafs or stuff in lg tomato.

Baked Chicken Salad

4 cups diced chicken
4 cups diced celery
1/2 lb frozen peas, cooked and drained
1 tblsp onion grated
1/4 cup diced pimento
1 tsp salt
1 1/2 cup mayo
Mix all ingredients togethr. Place into a slightly greased casserole. cover with crumb topping.
Crumb Topping
2 cups bread crumbs
1 cup grated American cheese
Bake at 350 degress for 25 mintes or until well heated and topping is brown.  This is great for a party.
Erin's Easy Party Dip
1 lge block cream cheese
1 jar Salsa
Pour over cream cheese
Serve with Nachos
Pepper Jelly also good over the cream cheese.
JJ's Easy Enchalidas  
1 lb ground beef
1 can refried beans
12 to 20 soft taco shells
1 packet of old Elpaso taco seasoning
1 tbs sugar
ketchup to taste
2 cups cheese
salas (kind and amount of you choice)

Brown the beef; drain.  Add packet of seasoning with a little water, sugar, and then the ketchup. stir till everything is mixed. Add the beans and then cook till warm. Separate the beef mixture into the shells (how every much you want in each shell). Place them in a oven safe dish.(don't foget to spray the dish to make sure you don't have a mess to clean up) Pour the salsa over them and then sprinkle the cheese. Cook at 350 until the cheese is melted. ENJOY!!!

1 german chocolate cake mix
1 sm. jar caramel ice cream topping
1 large tub whipped cream
1 package toffee chips

Bake cake per directions on box.  While hot, poke holes in top of cake with a drinking straw and pour caramel over top of hot cake allowing to melt down sides and in holes.  Cool well.  When cake is cool, top with whipped cream and toffee chips.  Store in fridge.

Erin's Toffee Chip Cake
Kim's Cream Cheese Rotel

1 lb. sausage, browned and drained
16 oz. cream cheese
2 cans rotel, drain one

Brown your sausage, making sure it is crumbled really well. In a microwaveable bowl, put sausage, cream cheese and rotel, (remember to drain one can). Microwave for about 4 -5 minutes, stirring every two minutes until all is melted and mixed together well. Serve with tortilla chips!

Kim's Crock Pot Ribs

3 lbs. pork ribs                        1/4 cup liquid smoke
1 tsp. sugar                             1/4 cup  water
1 tsp. garlic powder                  1 bottle barbecue sauce with onions


Cut rib into sections and place in bottom of crock pot.  Mix together sugar, garlic powder, water, and liquid smoke.  Add to crock pot.  Cook on low for 8 hours.  Add Barbecue sauce & cook 2 more hours.
Great for Saturday night races !

Sherry's Parmesan Chicken

2 Cups Italian Bread Crumbs
1/2 C parmasean cheese
1/4 C Italian Seasoning
2 tsp salt
1 stick melted butter
1/2 C Olive Oil (optional)
6 boneless/skinless breasts

Dredge chicken in butter, then in crumbs twice and bake in oven  about an hour at 350.
Serve with cooked pasta ( I add only olive oil, garlic and parmesan cheese)

Crescent Roll Meat Pie

Ingredients - 1 package of Pillsbury crescent rolls, 1 & 1/4 lb of lean chopped beef, 1 onion diced, 1 large green pepper diced, 1 small can 8oz. of   tomato sauce, pepper, salt to taste, 1 or 2 tsp oregano or italian seasoning and 1 - 12oz pkg of shredded chedder cheese, 1 egg..

In a 10 inch glass pie plate you piece the crescent rolls together, speading around the bottom & up the sides to make a crust. It doesn't have to perfect.
In a skillet saute the  onions, peppers and beef, drain excess juice then add your seasonings. Then add most of the 8oz can of tomato sauce and   simmer.  Beat the egg in a shallow bowl with a fork, add a generous handful of the chedder & mix. Spread the mixture on top of the crust in your pie         plate. It acts like a sealer for the meat mixture. Pour in the meat mixture & even it out. Top with as much or as little of the remaining shredded cheese.

Bake at 325 degrees for 25 min. Check that the crust has browned. That's why the glass pie plate. Let it settle for a few minutes after you take it out ,slice as a pie. You can serve it with a salad or french fries or sliced fruit even.

Broccoli Casserole

2 packages frozen broccoli, thawed in warm water and drained
1 cup mayonaise
2 beaten eggs
1 can cream of mushroom soup
1 1/2 cups shredded cheddar cheese
1 TBL minced onion
2 tsp worcestershire sauce
crushed Ritz crackers
melted butter

Preheat oven to 350 degrees.
Place thawed broccoli in baking dish.
Combine mayo, eggs, mushroom soup, cheese, onion, and worcestershire sauce.
Pour over broccoli.
Cover with layer (as thick as you want) of crushed Ritz crackers.
Drizzle crackers with a coating of melted butter.
Bake for 30 minutes or until crackers are golden brown.

I usually take this to family gatherings and the dish always comes home empty!

Oreo Icebox Dessert NEW

30 Oreo Cookies
8 oz softened cream cheese
2 cups 10x/reg sugar
2/3 cups peanut butter
1 12 oz container of cool whip
1 cup of milk
1/2 - 1 cup chopped peanuts (optional)

Crumble cookies and place on bottom of a 9 x 13 inch cake pan. in large
bowl; mix cream cheese, sugar, peanut butter, and milk. Fold in cool whip.
Pour over cookies and top with cookies or nuts. Freeze. Bring to
refrigerator to soften slightly before serving.

Layered Southwestern Salad
NEW  Stephanie (Jrscalifornia budgirl)

1 package of Hidden Valley Ranch Dressing, mixed to package specifications.  (The type you mix yourself has a much better flavor)
1/2 container salsa.  (I use the fresh salsa that you find in the refrigerated aisle of the grocery store)
1 can black beans, drained and rinsed
1 large green bell pepper, diced
2 medium tomatoes, diced
1/2 cup sliced green onions
lettuce, washed, dried, and torn
1 cup of shredded cheddar cheese
1 1/2 cups of crumbled corn or tortilla chips (optional)

Mix Hidden Valley Ranch dressing at least 30 minutes ahead of time.
After dressing is ready, mix salsa in with the ranch.
Layer the rest of ingredients in baking dish, starting with the drained black beans at the bottom.
Next layer bell pepper, lettuce, tomatoes,  green onions, and finish by topping with grated cheese.
Crushed corn or tortilla chips may also be added for a little extra cruch.
For an added kick,  chop a little bit of fresh cilantro to toss in the greens. Spoon dressing/salsa mixture over the top and dig in!

Boneless, skinless chicken breasts (6)
Bread crumbs (in can from store- not from loaf)
Hidden Valley Ranch dressing mix (in pouches- powder form)

Wash chicken, ofcourse-

Mix 2 packs of Hidden Valley ranch dressing mix in with bread crumbs- ( about 2 cups of crumbs

Roll chicken in crumbs

Bake until done.at about 350

Lisa's Easy Scalloped Potatoes NEW

2 large potatoes, sliced thin
1 large onion, chopped
1 can cream of mushroom soup
or cream of chicken
1 C. grated cheese
1 C. cooked ham,cubed

Mix all ingredients, place in casserole dish and bake at 350 until done.
Breakfast Casserole

6 slices buttered bread
1 to 1-1/2 lbs sausage,
6 eggs
1 tsp mustard
1 tsp each salt and pepper
1 cup grated cheddar cheese
2 cups milk

Line bottom of a 9 x 13 pan with bread that has been cut into cubes.

Brown and crumble sausage.  Sprinkle sausage over bread.

Combine other ingredients and mix well. Pour over bread and sausage.

Bake at 350 degrees for 40 to 50 minutes.

Betsy's Cheeseburger Pie

2 lbs. ground beef
2 beef bullion cubes
1-cup tomato sauce
4 Tbsp. flour
6 eggs
16 slices yellow American cheese
1/2 lb. cubed Velveeta cheese, optional
1 recipe for biscuits

Preheat oven to 375 degrees.  Brown the ground beef in a 2qt. saucepan
until no longer pink and then drain.  To the meat add the tomato sauce
and beef bullion and stir over medium heat until the cubes are
dissolved.  Remove from the heat and add 12 slices of the cheese,
stirring until melted.  Stir in the flour and eggs until well blended.
Roll out 1/2 the dough to fit a pie pan and pour 1/2 of the beef
mixture into it.  Repeat with the remaining dough and beef mixture.
Bake for 30-40 minutes then place 2 of the remaining slices of cheese
onto each of the pies and bake until melted slightly.  Remove from the
oven and let sit for 5 minutes.

Betsy's Mystery Pie

3 egg whites
1 cup sugar
1 tsp vanilla
24 Ritz crackers, crushed
1 cup finely chopped pecans
2 cups chocolate flavored Cool Whip (regular can be used)

Beat egg whites until stiff.  Add sugar and vanilla.

Fold in crackers and pecans.  Pour into a buttered pie pan.

Bake 30 minutes at 350 degrees.  Cool and top with Cool Whip.

Robin's Crock Pot Pork Chops
Place four nice pork chops in crock pot and add 1 can cream of mushroom or chicken soup and 1/2 envelope of dry onion soup. (you can mix the soups first) and pour over chops. Cook a few hours and serve with mashed potatoes or rice.
perfect for busy moms
